which is the determining factor in keeping Humbuckers quiet? I thought it was number of windings?

Bang on Matt, number of turns is crucial for full humbucking operation so symmetrically wound coils are full humbuckers. Technically offset coils aren't although you'd be amazed at how far you can offset before 50/60 cycle hum becomes audible 8)
