Does the nickel cover or black covers change the sound compared to an open faced MM in the bridge position? thanks

I'll take the leap of faith and say 'yes'

The more screws that are umm.. 'bare' the higher the output.

But that's me shooting blindfolded.

Yes in general pickups it will change it, but Tim alters the wind so that covered and uncovered sound as similar as possible. (very unlikely that you will notice a difference)

Oh. And unless you want it deliberatly overwound then it'll sound different.
