I've got an Ibanez J-Custom 7 which has a shiny gloss finish on the body. Any ideas on how the finish could be dulled to make it less shiny or matt finished? Bit of the old sandpaper perhaps?

Why do you want to make it matte?
Your best bet would be to use a fine grit wire wool and try to get it as smooth as possible but I would not recommend you do so.
If you are so desperate to change the finish I would recommend sending it to a professional, or doing a proper job of it yourself rather than a quick fix.

I just prefer the look of satin finished guitars, plus when you gig 'em, you dont have to polish the finish up after each night. A big plus!! People who relic guitars must rub the finish down to dull it somehow I guess. It just looks too new and sickly the way it is. I like road dogs :D

maybe not - but you might have to re-satinise every so often because it will buff back up to shiny with use
