A pot, is short from a potentiometer.

It is, your volume, tone, etc. You can have 500K, 250K, push-push, or push-pull, etc.

You may also be thinking of the term 'Potted' or 'un-potted' when refering to pickups. This use of the word "pot" means to partially fill the pickup cover with a waxy substance to eliminate feedback, or of course leave out the wax to give a slightly more open sound. Tim has perfected a method to produce an 'un-potted' pickup that does not feed back.

By all means tell us in which context you heard / read the word and we can clarify.

Basically It will be one of the two answers given, but we like to help on here...  :D
