				I've had to limit myself to only one type of cheese for Christmas this year (in training for a few half marathons in February  :o).
 
 If you could choose only one cheese for Christmas what would it be? I think I'm going to go for a bit of Stilton.

				One cheese mmmmm! No drinking? Wine perhaps? A marathon? For the winter over there all of the above and a Jalsberg too! And the day of the marathon : Pasta, olive oil and a bit of Parmesan , no tomato!!

 Edit:  I forgot to contribute to this thread but I'm afraid as someone from Wisconsin I couldn't possibly choose just one type of cheese.  That's just blasphemy donchaknow.

 To go back to the original question, can't really suggest anything as I'm not a big cheese fan.  Certainly nothing mild or runny.  Extra extra EXTRA mature cheddar, straight out of the fridge (NOT at room temperature  :x ).

				If I had to pick only one, then as a Yorkshireman it should be Wensleydale, but as a cheese fanatic I would pick Taleggio (though Morbier would be giving it a close run).  As a real cheese fan though, I would eat any cheese (and I certainly wouldn't be limited to one)!!

				I'm not a huge cheese fan, but as long as no one says brie then anything should be fine.

				But to truly enjoy Stilton you do need a large chunk of it - like at least 1/4 of a round.  Same with a good brie - it tastes better if you get a whole round and let it go runny......hhmmmmmm......cheeeeeseee

				Brie nice for french bread. Regiano Parmisan for full on flavour with real Italian smoked ham and balsamic vinegar.
 But it's a christmas cheese thread so dairy lea or stilton.

 I have to find that for my neice who is 6 and a massive Wallace & Gromit fan as well as being a cheese lover!  Wensleydale was the cheese I grew up with on a piece of christmas cake.

				I think it's got to be some Saint Agur, or some Gorgonzola for me, although Stilton and Brie are very close behind!
 Most cheese is good, but i'm not a fan of ones like crumbly Lancashire or Wensleydale... i'll eat cheddar 'til the cows come home though, it's so moreish :)
 Can't forget the pickled onions to accompany the cheese and crackers either, love them things!

 Interesting. The other day I was given a box of cheese straws, you know the kind of cheesy pastry sticks, but these are covered in icing sugar. I was somewhat dubious but after the initial "It's sweet. It's cheesy. It's sweet... and... cheesy" I managed to get through half the box in the space of a few minutes.

				All this talk of cheese made me go to the shop - I bought Morbier, Abbaye De Belloc, a really nice soft Brie and Assiago Fresco.  I already ate a lot of it!
