Title: Independent coil switching with H/H and 1vol/1tone?

I have a 3-way switch with 1 volume and 1 tone knob.  Is it possible to make both knobs push pulls, the volume knob splitting the neck pickup and the tone knob splitting the bridge?  Or do I need independent volume/tone knobs in order to target each pickup individually?

with a push pull volume with the correct resistance and a push pull volume of the correct resistance, you'll be able to get it done.

for humbuckers, volume impedance should be from 500k to 1meg depending on your feeling (the higher impedance, the brighter you get)

for tone... i guess it varies. some like 250k for hums. some like 500k. some like 1meg
default manufacturer value will be around 500k for volume and 500k for tone
gibson is known to use 330k for volume and tone
if you want to split both pickups at the same time, only a single push pull will be needed. but for independent control, you need two PP's

The impedance just relates to the tone that I'll get from the pickups right?  Like it'll work regardless of which I have, just might not sound so great?

Yes.  You'll probably find that you have 2 500k as stock, so you could just get 2 500K push/pull (or push/push if you want).  They will work fine 90% of the time.  I'd avoid going higher for the volume (depending on the pickups), since it will make the split tone brighter, and may get too shrill.
