I've got an Epiphone LP Custom. The help thingy on the shop says most Gibson stuff will be 50mm spacing. I measured my pickup from the middle of one pole to the middle of the other and it was 53mm does this mean I need to get 53mm? How do I know?

Measure the strings, E to E, over the pickup polepieces nearest the bridge and go with that ;)

Agreed. You'll probably find it's more than 50mm and less than 53mm, so go with the closest.
But it doesn't make a massive amount of difference either way on a Gibson style guitar. The 53mm spacing really comes into its own with a Floyd or a vintage Fender bridge, where the spacing at the saddles is 54mm or more.

A lot of Epi and Gibsons have a 53mm spacing these days at the bridge and Gibson make a lot of 53mm spaced pickups
