Is there a particular kind of wire that would be best to use if I was to take out all my wiring and start from scratch?
I've done some mods using what was already there but i've never used anything i've bought myself.

Depends if you are wiring a Fender or Gibson. In a Gibson, used screened wire, in a Fender use cloth covered wire. Stewart McDonald's in the States sells both:

They do shorter length packs and also sell it by the foot.

I've used all kinds of wire in my strat, I've used 16 gauge automotive speaker wire(not recommended), shielded single conductor wire, and I'm planing on using the Gibson Vintage braided wire just cause I can. Anything will work really, but other work better than some. I would stick with the Fender wire just to keep it simple.
