I was wondering what would be the best set of pickups for nailing the hendrix tone
Something that would be warm but still have a lot of bite and tone to it. Cheers :)

If you mean for a strat I would look at the Pat Pends 63 and the (hotter, but still vintage) Irish Tours. Maple or rosewood board?

Right. With the snap of the maple neck the Irish Tours are a good choice. They clean up very good and can get close to the Mother's Milk/Pat Pend-sound if you roll the volume down. Compared to them the IT's have more bass, a little more mids and slightly less treble. The IT's handle gain very well and can do Hendrix-stuff with authority.
Order a baseplate for the bridgepickup: extra lows/lowmids and a bit more chunk.
