Welcome!
Can't help you with the switch, tho there are others here that can.
As for pickup choices ... do you know what kind of overall sound you're looking for?

For the rotary switch I'm guessing you could just change it to a regular 3 way switch like LP style..and use push pull pots for the volume pots so you still get the splitting stuff? Might not work actually but its worth a try, thats what I'd do as I hate the PRS switching!

Yeah 3 way switch with coil taps was what i had in mind.As for the sound i guess something kike a beefier jb type thing.

3 way toggle switch with coil tapping for both pickups can be done - PRS offer it as an option (though you rarely see them in the shops) on the Custom models & as standard on the Singlecut models.
I don't like the silly 5way rotary either. When I decided to buy my PRS I accepted that I wasn't going to find a custom 24 in a finish I liked with the toggle so I settled for the roatary. 1 week later a custom 24 turned up in Coda music in the exact same finish with the damn toggle

I would put Rebel Yells on the PRS, I have them on my Standard and I love the sound. The other option is VHII - but they don't drive quite as much.
You can put a gibson 3-way switch, then you just have to decide if you want the coil tap or not. If you don't want it, then that is all you need.
