I listened to Octavarium from the Score DVD yesterday and in between stuff I can't decipher I'm sure I heard James Labrie listing Beatles songs.

Off the top of my head I can remember 'Lucy in the Sky With Diamonds' being in that verse.
I too use chicken as a measurement.

Yes. He's the whole verse:

It's a pretty damn weird part of the song. It was a game that Mike Portnoy came up with, to connect song titles and pop-culture phenomenons to each other in a way that it almost makes sense but not really.
