You'll have to solder anyway to change pickups. It depends on your switch and what you want. If you have a slider switch, you could keep a 5 way and use it to give alternate combinations in the inbetween settings (like one coil from each p/u). If you put in a 3 way you can get both hb's in the middle posiion.
Taking out the pickup isn't a problem, you'll just be left with a hole in the guitar unless you put in a cover. There is another option, and that is to put in something like a trilogy or sinner and wire it with one coil of each hb so all the settings are hb. Tim has some great HSH combinations.
For a neck pickup, you could look at a Mule, or a Miracle Man with Alnico V - it is amazing how clean and bluesy the MM sounds with the V magnet.
