I saw the SD Quarter Pounder has almost 6.4 mm diameter polepieces. What about a humbucker having two rows of huge slug polepieces? How would that affect tone, sustain and dynamics?

I think it increases mud res.....I mean, er bass response quite a bit.

Other than that, dunno.

It doesn't sound very nice IMHO, Rio Grande do it on their Muy Grande pickups as do SD on the Invader and, as you rightly pointed out, on their Quarter Pounders. The magnetic field thrown out by such huge poles is actually counter productive as each interfers with the other and actually distorts the magnetic filed overall................the tone is overly compressed and choked sounding.A similar effect is caused in humbuckers with two extra flanking magnets run down the sides where the maple spacers should be......again on paper you'd think you'll get more power but in reality you don't, just a poorly defined tone with little or no dynamics.

Is that like having two P90's in series? Or P90's behave differently?

Totally different beast Peterku, wide and squat coil with two bar magnets facing inwards(same polarity on both mags towards centre) to the central pole shoe which has 6 pole screws running through it.
