If I had to choose just one, I'd probably forgo the obvious (for me) choice of Gary Moore, and I'd have to instead go for Reeves Gabrels.
More than anything I like the way he can switch between ugly, avant-garde prog type stuff to really sweet blues in a single solo. And I love his tone.
