can you give us some hint on materials, construction etc?
anyway i've got no personal experience but many say that the best hard rock-metal pickup for alder is the Holy Diver... and i assume that your strat is made of alder, right?
Mule, MQ, Stockholm, CS, RY, MM, PK, ANB, CNB, AWP, CWP, PiG90...

too many? ;)

I assume you mean "calibrated open set" and "open-pole"...

"open" means that there's no cover -  sorry for stating the obvious  :? - and "calibrated set" means you have a set (that is, two pickups), and that they are made to work fine together, one in the bridge position  and the other in the neck position.  So you can either buy _one_ pup (covered or open), or a set - that is, _two_ pups - covered or open. And yes, indeed, buying two pups will cost a bit more than buying only one  (but less than 2 times the price of one pup, and you'll be sure to have pup that match each other).

from indirect knowledge i'd say yes, holy divers or maybe crawlers... ask tim (the boss), he always answers questions and he's lightning fast! :)

I think Tim usually recommends painkiller or nailbomb for Petrucci
Riff Raff, Mules, Black Dog, VHII's, Cold Sweat

The crawlers do indeed sound pretty good on bright & tight guitars - well, at least from what I can tell having theme on my maple going-thu neck / rosewood touchboard / maple body Vox Custom 24. They're really versatile and sure do a nice job on heavy distortion too (really hot, I have to say), but they're probably still more on the vintage side IMHO.  So Scott, if you want pups that can go from early clapton blues to sixties tones (I can even get almost Ricky like chimes out of them) to hard rock / early metal, crawlers could indeed be a good choice. But for more modern metal stuff, I can't say. You might be happier with holy divers, or even hotter pups...

A very sound advice
