If by bottle you mean those gay little el34 sized things of various spices in tescos et al, no. I dont roll like that. I have a huge bag of the stuff and put at least 2 of those bottles worth in.

I'm a purist with my spag bol (which is ironic as it's hardly a classic italian dish). If I want mince with chili I'll make chili, if I want chorizo I'll make spanish. Wez, try pancetta, a tablespoon of green pesto and half a tablespoon of sundried tomato paste, it'll give it a similar lift while still keeping the essential character of the dish.

i do vary it up depending whats in and how i am feeling, but i am not interested in authenticity or being true to the dish - just what works with my tastes!

i can say this, chorizo in a spag bol works very well for me

i am talking about the little fat cooking ones rather than thin deli slices, that woudlnt work at all

there is no better smell than onions garlic and some cubes of chorizo gently frying away and just that over pasta is a great snack.  I also like bacon in a spag bol, but not at the same time.  smoked bacon gives you pork fat and a smokey taste.  Chorizo give you pork fat, a smokey taste and just a little extra spice and colour

edit:  i should also point out that my spag bols are not mince heavy, the main ingredient is tomatoes.  i hate it when its just mince and onions with some tomato juice or a jar of sauce stirred in  :?

Yeah, maybe I'm just put off by failed experiments with pepperoni and salami. However, diced Chorizo is a lot denser than bacon.

it can be a little dense.  but if its fried slowly at the start it releases a hell of a lot of flavour into the sauce.  it still stays dense but those little cubes taste godly

tonight I'll be having a northern treat - saveloy with pease pudding and stuffing plus tomato sauce, nam nam!!!  :D

when the brother in law came up here a couple of months back I made this for tea and his face was a treat.  credit where its due though, he gave it a go and said it was nice (might have been being nice, ha ha).
