Well let me just throw in the Mule, great vintage hb, very versatile. Tends to be warm and soft, though can do a lot more if you want it too. Great for those Santana and Moore sounds I recond (though moore used the PG Blues)
I think it would fit great with single coils as it will be fitting, but be a nice different flavour.
As it is rather dark it should work great with the mid boost (my neck one does anyways).
Though if I had to go off and think that you may be installing 250k pots (no wiring expert), the mule might be too dark even with the boost. Don´t know much about the vintage alternatives, but if you want it a bit hotter, I believe there is somewhat of a hotter, brigter mule, though I´m not sure of the name right now^^
Even further, but I believe very attractive, is the Rebell Yell. It would give you the correct amount of brightness (rather bright PU, but I still do a mid boost in a Ibbie S with 500k pots to bring that extra rock dirt, warmth and thickness). Great PU, also versatile and has enough vintage character to satisfy you I believe.
Single Coil wise, I´d settle for the Irish Tour. Great single, will give you what you wish for. If you weren´t boosting the mids too much perhaps the slowhand even, but it is rather middy anyways.
