I have basically done what you are thinking of doing, and over the last 30 years picked up 2 or 3 guitars a year. When I started it was a lot easier to get great deals (I picked up a 60 strat for £500, a 63 strat for £350 and lots of guitars over here in the States for less than $1000. I originally just got things I liked, but then a few years ago started getting things that I had bought and sold when I was first playing and could only afford one electric and an acoustic. This year I've picked up a 1971 Les Paul Custom and a Squier Duo Sonic (so far!) along with a white Marshall Class 5 combo. There are 2 big problems with doing this, one is space to store them all, and the other is getting to play them enough, and forget it when you have to do string changes and setups! I try to do 5 guitars at the same time, since I already have everything out.
Since I also play bass, I have a fair number of bases in my collection too. You can also put some guitars together yourself if you are handy and feel like doing that (I've made a lot of Warmoth guitars over the years).
