The official demos on the pickup pages are (IIRC) all done with a Les Paul, so the PK should sound very similar in your guitar (depending on your rig, of course).
Zimbloth has said the PK sounds best in mahogany, better there than any other wood; I have a set in a basswood 7, and I can see how the high mids of the PK would balance awesomely with the low mids of mahogany! Probably better in the PRS than in the Ibanez, since the PRS is a slightly shorter scale, taking a little edge off, so you sold the right guitar!

Re: neck pickups, it depends on the sound you want. I love the PK neck, in my basswood it's fluid, but edgy, super clear; it like a lot of bass from my amp (model) but never ever gets muddy; with a boost and a little flange/delay/reverb, I can make it sound like an 80's analog synth!

But the CS neck is the go-to classic shred pickup, and is often paired with the PK; to my ears (I don't have one personally) it's sweeter and less edgy than the PK, but still cuts through just fine.
