Man, I've never been much of a strat guy myself...until now...I don't get it! I guess after a while, you realize how good they really are. It's funny, because  now I'm majorly GASing for a Hum/Single/Single Strat. (I CAN'T leave humbuckers behind!!!)

A maple neck will get you close to Gilmour's tone, I believe most of the character of a strat comes from the neck. To compliment that, I would choose an Apache set, because Gilmour's sound is traditional vintage strat all the way, and these pickups are BKP's take on true vintage strat sound: round and glassy.
For SRV tones, you'd be happier with a rosewood board of course, except for that "Lenny" tone, which is a maple neck strat.
