I have a JS1200 with Dimarzio pickups, they have rather tacky looking chrome pole screws (Allen head)
My question is, can I remove them and change them to black, without ruining the pickup?

Wont be a problem at all.
Where are you getting the black pieces from?
Remember that the thread size in dimarzio is much bigger than say a Seymour Duncan pickup poles.
If you are going to source from a hardware or whatever, make sure that they are magnetic!! Some stainless steels are non-magnetic!

I was just going to remove one of the original poles, check it for size, then fit replacement, black steel Allen bolts.
When you say they should be magnetic, do you mean made of ferrous metal, not that they should actually be magnetic?

I think you can get replacement pole screws from DiMarzio - they won't let their US dealers sell to customers outside the US, but if you contact them direct I'm sure they'll be helpful enough.

Yip. Need to be ferrous, not magnetic by themselves. I was surprised to find some stainless steel ones which would not 'conduct' magnetism at all!!!
Make sure the threads on your new pieces are the same as originals or else you will need to re-wax the cavities.
