Thanks for all the advice guys, it's a real help for all us noobies to the realm of pickup modification to have such a wealth of experience on tap out there. It helps to have a bit of input rather than just jumping in and spending quite a lot of money on mods. The Jackson volume and tone pots are more like on off switches too. Would it be wise to invest in some new pots to compliment the pups (they're rated 500k so d'you have to get the same?), and maybe new capacitors too? I'm not intending on coil tapping so do I just need 2 conductor wire? The pup replacement looked pretty straightforward, but these other replacements might be better carried out in the non-cackhands of a pro I think.

If the Jackson pots are 500K pots with Push Pull switches you may as well retain them, thats if they are still servicable. i.e not crackling or any such like. You could use these for pickup coil tapping should you desire.

IMHO, I find 500K pots that are matched and close to the nominal value give the better tone when coupled with a  0.022uf capacitor.

Use an decent and appropriate wattage Soldering Iron.
