I fry mine. Score it first and rub some salt, chillis and garlic into it then fry it.

i rub it with a bit of pepper and olive oil, fry it in the griddle pan on a very high heat for a minute or two each side to get the colour.  then transfer it to the oven covered in tin foil for a few minutes. then take it out and rest if for a few minutes (the most important step).

exact times will depend on your oven

No I am with you there. I cannot understand the attraction of steak, raw or cooked or whatever-I prefer to see it in it's natural state, i.e. still a living part of an animal grazing contentedly in a field but then each to his own.
I like food ( I eat nothing else) but it is one of the many things I enjoy in life, along with a nice cup of tea, glass of beer, glass of whisky, decent book, great music, beautiful view, family, friends, my cats, traveling, staying at home (and I'd better mention Mrs 38th here in addition to family just in case she reads it)  etc etc... not necessarily in that order.

Er.. er... but if you're not eating steaks (and therefore not helping to rid the world of this methane generating, pestilential, menace...) it seems a rather specious argument to suggest that your methane footprint is less because there are in fact less cows as a direct result of your inaction!! :lol:

I think all we cow-guzzling types (whether we partake raw or otherwise) are owed a huge debt of gratitude for our sterling efforts to protect the rest of you from the plague of ruminants with which our ancestors have seen fit to inflict us with :D

Do the greenies also only eat rare steak, as to decrease the amount of energy wasted on sufficiently cooking food :P

AndyR: I'm all for carbon neutrality, as the family owns a lot of land + trees, I have to work especially hard to produce enough Carbon Dioxide by keeping the wood and coal fire going 24/7

And finally... these debates make me happy too ;)  in good humour ofcourse

First things first, buy fillet steak, not of the other nonsense. At a push, rib-eye, but really fillet all the way. So I'm assuming you have fillet cause best cooking approaches vary from cut to cut.

Bit salt and pepper on it, a decent steak should need owt else.

Griddle pan, wiped with just enough oil to make it shine. Get it searing hot, drop your steak in for litterally two or three seconds then turn it over so it's sealed. Then it depends on how rare or well done you like it. I'll rarely leave it in there for more than two minutes a side and that's if it's awfully thick thick. But I do look it to be in a state where a decent vet could revive it.

I generally make sauces too, but a decent cooked steak and some dirty great big thick chips is fine and dandy!

i disagree about the fillet being the best choice if we were talking about a 'proper' steak and chips kind of meal - its far too lean and refined for that.  Fillet would be the cut i was having with  some fresh steamed veg or briefly cooked in red wine with mash.   

a good rump steak can be perfect, but it needs to be nicely marbled with a little fat, and be of good quality - most supermarket stuff is far too fresh and lean but i got a great one from waitrose the other day.  as soon as i opened the pack i could tell how much better it was going to taste than the usual supermarket cuts, it looked, felt and smelt infinately better...  but really you should go to your butchers!!

also i always oil the meat rather than the pan, seems to work better when working with a griddle pan (which i probably wouldnt do for a piece of fillet).   my pre cooking procedure is remove from packing and pat dry with kitchen roll, give it some pepper and leave it.  Oil it (fairly decent olive oil would be my choice) just before putting it in the pan then salt it in the pan... i might pepper it up a while before cooking but adding salt too early can make it a little tougher

i make a mean blue cheese sauce as well
