This thread is making me really want a steak, may have to go and buy one to try and cook tomorrow :lol: Whats the best way to do it?

As others have said, depends on the cut.  I also disagree that fillet is the only cut worth having.  I'm a porterhouse fellow myself - it has a richer beefy rather than steaky flavour if that makes any sense?  I do agree with all the searing hot pan, seal, cook as long as you feel necessary advice but I would add it really helps to let the meat rest for five to ten minutes before serving.  This will help it relax and become more tender.  To do this, when it's finished cooking put the steak on a warm plate and cover it, then put it in a warm oven - as you might if you were keeping plates warm. Leave for up to ten minutes and then serve.

If you want a quick sauce to go with it this is one I quite often do:

Deglaze the steak pan with a good slug of red wine (this leaves you most of a bottle to drink - a good thing).
Reduce the wine down by at least half.
Add a dash of mushroom ketchup and a couple of table spoons of creme fraiche.
Grind in a little black pepper and serve.

Don't forget to drink the rest of the wine.  This is very important.

i did mention letting it rest.

then take it out and rest if for a few minutes (the most important step).


this goes for any meat as cooking forces juices out and tightens any muscle tissue, the resting time lets the muscle relax again and it will soak up some of its juices to keep it moist and succulent

A 2” thick Porterhouse cooked Black & Blue (charred on the outside red in the center). Add to that some steamed asparagus, a couple of tablespoons of sautéed onions with mushrooms, and a small helping of rice pilaf. Served with a nicely chilled Sam Smiths Nut Brown Ale.

I go for the Hugh Fernly-shiteOnTheWall theroy, I now eat a lot less meat, but what I do eat is much better quality.  Find yourself a good butcher, or even better get direct from the farm (there's numerous places round here, but I do live in the country so you city boys might have a bit of trouble).  If it's packaged, then take it out, wipe it down and let it breath for bit (as soon as you get it).  The loosely cover it until you need it.

hmm, my steak meal does make me happy, and it's pretty simple.  i am going to have to try some of the methods posted earlier though!  i get a nice piece of fillet or sirloin from my butcher and just fry it on a hot pan with a little olive oil, usually about 3 minutes a side for fillet, 2 for the normally thinner sirloin.  then while it rests i fry a few mushrooms, peppers and onions.  if i'm having potato or chips those are already cooked, but in recent times i've gone more for salads or steamed vegetables.

i also like a nice tuna steak.  it's not as tasty as the beef, but it makes a good alternative, and apparently it's good for you :)

of course, plugging my les paul via my treble booster into my little 15watt valve amp and wailing for a while also puts a bit of a smile on my face :)
