Not definitive but:

Sonny Landreth- Grant Street
Allman Bros- Live at the Fillmore East
Joe Bonnamassa -Sloe Gin
Stevie Ray Vaughan - Live at Montreaux
Steely Dan -The Royal Scam

it will no doubt change  shortly but for now I have been listening to these when time permits.
Edit ( upon seeing Tom's question) these are not pure guitar albums but those that i love the guitar on)

what is a 'guitar album'? how much guitar has to be actually featured? will do my best to come up with some names!

I'm sure I'll change my mind in a few minutes but...

Steve Vai - Passion & Warfare
Steve Stevens - Memory Crash
Steve Morse - Coast To Coast

OK, that's enough of the Steves.

Joe Satriani - Not Of This Earth
Vinnie Moore - Mind's Eye
Allan Holdsworth - Hard Hat Area
Di Meola, De Lucia, McLaughlin - Friday Night In San Francisco
Greg Koch - Radio Free Gristle
I see a rainbow rising
Look there on the horizon
And I'm coming home

Without a shodaow of a doubt, Blues Saraceno's Plaid.

Tone, technique, songs.   If you play guitar you need to listen to it.

The only guitar instrumental stuff I've heard and enjoyed are by 'The Shadows', 'The Ventures' and Dick Dale - take it back to the old skool ;)
