180pf is the original PRS value. I've tried 50s wiring, 50pf to 1000pf and almost everything in between. In the end I installed BKP/CTS 550k pots with regular (not 50s) wiring and I love it. There is some treble loss but it sounds really sweet without getting muddy. I highly recomend it.
The next best thing (IMHO) is regular wiring with a Suhr-style bypass: 150k/680pf in parallel. You get a different taper that way, much more linear but the clarity is great without losing brightness. If you really want a "guitar mounted gain control" this is the way to go.
