I agree - if you like the out of phase sound, yeah do it, and you'll need at least one pickup to be four conductor.
I personally don't find a lot of use for it. If I was going to do anything, I might be interested in having an option for outer coils of both pickups - in that case both pickups need to be four conductor.

, had mine since January in a Les Paul Traditional, haven't put the guitar down since (and I'm a strat-player!). I've found a HUGE range of tones from these pickups just using standard wiring and controls. Mine's wired "modern" - I don't get on with 50s - and I didn't even bother changing, or even checking, the pots (I did actually buy a set to put in, but it worked "as is" for me when the Stormies went in, and I haven't stopped playing it long enough to get the soldering iron out again. The pots'll probably get used in something else now)
