As for the mulit-mic'ing, I had a thread not too long ago about recording electric guitars using different mic'ing schemes, and there were lots of helpful posts on there.
I usually use 2-3 mics when I record guitar tracks. There are 2 reasons:

THE MICS SOUND DIFFERENT. So, you blend them. The SM57 has a particular sound, and a good one; so does the 319. If I want to accentuate a certain sound, all I do is adjust the balance of the mics instead of EQ.
I try to use EQ as a last resort.
2.
YOU GET A BIGGER SOUND. With 2-3 mics you get more air and a slightly different sonic picture than just using one mic. I like the sound of layered microphones, however. Some people like the directness of just one mic.
For example, listen to the intro to
Number of the Beast. Each guitar has 2-4 mics on it. Then listen to the intro to
Wildest Dreams. That's a single SM57 for each guitar track.
