Why the recess under the bridge?  Is it just to make room for the piezo gubbins, or is the neck at a shallow angle?

Right first time
It's to allow all the wires from the piezo bridge to sit safely beneath the bridge without any risk of being crushed.
The neck angle is spot on for a normal LP type guitar - we always have our tunomatics quite low for comfort reasons which is the reason we needed to make a little more space for the cables.
All is hidden once the bridge is in place - the groove is pretty shallow in reality anyway
A too high tunomatic can be uncomfortable to play on, so I like to set them fairly low

Sounds great!  And I agree, a T-O-M feels (and looks) better when it's set low.
