A christmas cheese dilemma....

I've had to limit myself to only one type of cheese for Christmas this year (in training for a few half marathons in February  :o).

If you could choose only one cheese for Christmas what would it be? I think I'm going to go for a bit of Stilton.
I think I hate being indecisive.

One cheese mmmmm! No drinking? Wine perhaps? A marathon? For the winter over there all of the above and a Jalsberg too! And the day of the marathon : Pasta, olive oil and a bit of Parmesan , no tomato!!

Edit:  I forgot to contribute to this thread but I'm afraid as someone from Wisconsin I couldn't possibly choose just one type of cheese.  That's just blasphemy donchaknow.

For me it would be Stilton by a mile, second: melt down some Raclette with some french bread.

Does it have the Stanley cheese factor in full effect?


To go back to the original question, can't really suggest anything as I'm not a big cheese fan.  Certainly nothing mild or runny.  Extra extra EXTRA mature cheddar, straight out of the fridge (NOT at room temperature  :x ).
